New Opening: The Butchery
Acclaimed whole-carcass butchers The Butchery open with a special competition to create the "Spitalfields Sausage".
Old Spitalfields Market gains another acclaimed specialist food retailer at the end of the month, when The Butchery Ltd, runner-up in the 2018 Observer Food Monthly Award’s Best Independent Retailer category, open their new store at 6a Lamb Street. To celebrate they’re looking for the perfect sausage, launching a competition for customers to create the new “Spitalfields Sausage”*.
Third-generation butcher Nathan Mills and partner Ruth Siwinski source native and traditional breeds from small, independent farmers with high animal welfare and land management practices. To give farms the best price and minimise waste, animals are bought as whole carcasses and then dry-aged for maximum flavour and tenderness. The Butchery Ltd is currently the only entirely whole-carcass butcher in London.
Regular products include Llanwenog lamb and mutton from the Forest of Dean, Old Spot and Saddleback pork from Monmouthshire, 100%-grass-fed Longhorn from just outside the M25, and other English beef including Dexter, White Park, Hereford and Belted Galloway. Continuing their ethical approach, Nathan and Ruth also buy retired dairy cows and English rose veal, supporting the reduction of waste in the dairy industry.
Expect to see a range of premium dry-aged beef joints on display, along with a life-size portrait of Leonardo, a commissioned artwork by former employee Ellen Christiansen of a bull from John Lean, one of the shop’s favourite farmer. Staff at The Butchery Ltd are adept in traditional butchery skills – everything is done with knife and saw by hand. Steaks are cut to order, and knowledgeable staff are able to advise on what cuts will suit different palates and cooking requirements. In addition, The Butchery Ltd make their own sausages and bacon – and legendary sausage rolls – and will stock a selection of wine and beer, carefully chosen to compliment your meat.
